I knew I wanted to try this recipe out with coffee as soon as I decided to add condensed milk to the equation. Something about coffee and condensed milk is incredibly delicious and the cheesecake flavor works surprisingly well with it. I was cautiously optimistic, but it worked. These could also be made without the cream cheese, just use more milk for a more traditional coffee flavor.
Coffee Cheesecake Popsicles
Servings: 6
Ingredients
1/2 cup nonfat vanilla Greek yogurt (or plain with 1 tsp. vanilla extract)
1/2 cup nonfat milk
8 oz. lowfat cream cheese
1/4 cup light sweetened condensed milk(or 1/2 cup powdered sugar)
1 cup strong black coffee, cooled
Instructions
In a food processor pulse the yogurt, milk, cream cheese, condensed milk, and coffee together.
Taste to make sure it is sweet enough for you and add more condensed milk/sugar if needed. You can also use Stevia to reduce the calories.
Pour into popsicle molds and let freeze for 4 hours or until frozen.
